Malinda's Recipes:

Cheesy Egg Wedges

» 4 eggs -- beaten
» 1/2 cup milk
» 1/4 cup flour
» 1/2 tsp baking powder
» 1/8 tsp garlic powder
» 2 cups cheddar cheese -- shredded
» 1 cup cottage cheese
» chives
» salsa

Combine milk, eggs, flour, baking powder, and garlic powder. Beat with a beater until combines. Stir in cheeses and chives. Pour into a greased 9" pie pan. Bake uncovered for 25-30 minutes @ 375 Cut into wedges and serve with salsa. Serves 6 May be cut into small pieces and used as an appetizer.

Brunch Scrambled Eggs

» 1 8oz can Mushrooms
» 1 1/2 dozen eggs
» 1 8.8 oz can evaporated milk
» 3/4 pound shaved ham -- cut into bite size pieces
» 1 cup cheddar cheese -- grated
» 1 can cream of mushroom soup, condensed

In large skillet, melt butter and add eggs. Scramble until barely cooked. Sprinkle ham into a buttered 9x13x2 pan. Pour Eggs over ham. In a separate bowl combine remaining ingredients and pour over the eggs.

Bake @350 for 45 minutes......remove from oven and let stand for 10 minutes. Can be slowly reheated.

Herbed Cherry Tomatoes

» 1 pint cherry tomatoes -- halved
» 1/4 cup vegetable oil
» 3 TBS vinegar
» 1/4 cup parsley -- minced
» 1 1/2 tsp basil
» 1 1/2 tsp oregano
» 1/2 tsp salt
» 1/2 tsp pepper

Place tomatoes in a bowl and set aside. Combine oil and vinegar. Add parsley, basil, oregano, salt and pepper and mix well-pour over tomatoes and cover and refrigerate for at least 3 hours or over night. Drain before serving. Serves 6.

Blueberry Lemon Bread

» 6 tablespoons butter -- softened
» 1 cup sugar
» 2 eggs
» 1 1/2 cups flour
» 1 tablespoon baking powder
» 1 teaspoon salt
» 1/2 cup milk
» 1 cup blueberries -- fresh or frozen
» 1 1/2 tablespoons grated lemon rind
» 1 teaspoon fresh lemon juice

Grease and flour 4 mini or one loaf pan. Pre heat oven to 350. In a large bowl cream butter and sugar add the eggs and mix well. In a separate bowl sift together flour salt and baking powder. Add milk and the sifted ingredients, alternately, to the creamed ingredients. Stir in the blueberries, lemon peal and lemon juice. Bake @ 350 for 40-50 minutes. Depending on size of pans - regular loaf, mini loaf or muffin.
